Beefy Taco Casserole with Mixed Green Salad

INSTRUCTIONS

Prep

Preheat oven to 425ºF;

Thinly slice green onions.

1Cook Beef

Heat a drizzle of oil in a large pan over high heat. Add ground beef & break up into pieces with a spatula or wooden spoon. Cook until browned, 4-5 minutes. Stir in ½ taco spice blend & season with salt & pepper. Remove from pan, place in a bowl, set aside.

2Make Filling

Add onions, garlic, & a drizzle of oil to the same pan over medium heat. Cook until softened, 2-3 minutes. Stir in remaining taco spice blend, corn, beans, half green onions. Cook until fragrant, about 30 seconds. Stir in diced tomatoes & ground beef. Season with salt & pepper.

3Assemble Casserole

Place a layer of filling in a baking dish. Top with a layer of tortillas & ¼ of the cheese blend. Create a second layer, finishing with a layer of filling & cheese. 

TIP: Cut tortillas in half to produce flat edges for use in a square/rectangular baking dish.

4Bake Casserole & Make Salad

Bake casserole until melted & bubbling, 5-7 minutes. If you want  a golden & crispy top, heat broiler to high & broil casserole a further 2-3 minutes. Meanwhile, halve lime. Halve baby tomatoes. Toss mixed greens & grape tomatoes in a large bowl and house dressing. Season with salt & pepper.

5Finish & Serve

Sprinkle casserole with remaining green onions. Cut casserole into slices & serve with salad & a drizzle of lime crèma on the side.
