INSTRUCTIONS

Prep

Adjust rack to top position and preheat oven to 425°F;

Cut potatoes into ½-inch-thick wedges;

Halve, peel, & thinly slice onion;

Cut buns; spread some garlic butter lightly on both cut sides of the buns, set aside.

1Roast Potatoes

Toss potatoes on aluminium-lined baking sheet with a drizzle of oil, fry blend, salt, pepper. Roast on top rack until potatoes are browned & crispy, about 20-25 minutes.

2Caramelise Onion

Meanwhile, heat a large drizzle of oil in a large pan over medium-high heat. Add remaining garlic butter blend & onion; cook, stirring occasionally, until browned & softened, 8-10 minutes. Stir in a splash of water; cook until onion is caramelised & jammy, 2-3 minutes more. Season with salt & pepper. Turn off the heat; transfer to a medium bowl. Wipe out the pan.

3Make Patties

While onion cooks, in a large bowl, combine turkey, house seasoning, pinch of salt & pepper. Form into two patties, each slightly wider than a burger bun. Once onion is done, heat a drizzle of oil in the same pan over medium-high heat. Add patties, cook for 5-7 minutes per side. Top patties with Swiss cheese; cover pan to melt cheese.

4Toast Buns & Assemble

Heat skillet over medium high. Toast both side of the bun, garlic butter side down, until golden, about 1 minute.

Spread bottom buns with as much aioli as you like, fill buns with patties & caramelised onion. Divide burgers & potato wedges between plates. Serve any remaining aioli on the side. Enjoy!
