Greek Lamb Burgers on Toasted Brioche Buns with Mediterranean Orzo Salad

INSTRUCTIONS
Prep
Preheat oven to 350°F;
Bring pot of water to a boil;
Thinly slice tomato;
Remove leaves from stems, roughly chop parsley;
Roughly chop sundried tomatoes & olives, saving any brine/oil;
Crumble feta.
Add orzo to boiling water, cooking for 5-7 minutes until just cooked. Drain, add a drizzle of olive oil, pinch of salt & pepper, olives/caper/sundried tomato blend with all brines/oils. Mix together, set aside with lid to keep warm.
In a bowl, combine lamb, Greek seasoning, feta, salt, pepper. Mix well. Form into two burgers.
In a large skillet over high heat, add a drizzle of olive oil. Sear burger patties for 2-3 minutes on each side until browned. Place on a baking sheet & cook for a further 5-10 minutes to desired temperature. Wipe skillet clean.
Remove burgers from the oven & let rest. Heat skillet to medium high. Add both sides of the bun, cut side down, toast for a couple minutes until golden brown. Place burger on a bottom bun, top with lettuce, sliced tomatoes, tzatziki & pickled onions. Serve with orzo salad.
