Griddled Onion Cheeseburgers with Burger Sauce & Garlic Potato Wedges

INSTRUCTIONS
Prep
Adjust rack to top position & preheat oven to 425º F;
Halve, peel, & finely dice onion;
Cut potatoes into ½-inch thick wedges;
Thinly slice tomato into rounds.
Toss potatoes on a baking sheet with a drizzle of oil, garlic fry blend, salt, & pepper. Roast on top rack until browned & crisp, 20- 25 minutes.
Heat a drizzle of oil in a large pan over medium-high heat. Add onion & cook, stirring occasionally, until browned & softened, 5-7 minutes. Season with salt & pepper. Transfer to a plate.
While onion cooks, mix beef & burger seasoning in a bowl. Form into patties, each slightly wider than a burger bun. Heat a drizzle of oil in pan used for onion over medium-high heat. Add patties & cook almost to desired doneness, 3-5 minutes per side. Top each patty with cheddar & cover the pan until cheese melts & patties are cooked to your liking, 1-2 minutes more.
While cheese melts, toast buns until golden brown. Fill toasted buns with patties, onion, tomato, lettuce, pickles & sauce. Serve with potatoes & any remaining sauce on the side for dipping.
