INSTRUCTIONS

Prep

Place an oven rack in the centre of the oven; preheat to 450°F;

Fill a medium pot 3/4 of the way up with salted water; cover & heat to boiling on high;

Cut pak choi into bite size pieces, separating leaves & stems;

Peel & medium dice potatoes;

Make meatloaf: In a large bowl, combine pork, breadcrumbs, drizzle of olive oil, half ginger/onion/garlic blend, pinch of salt & pepper, gently mix to combine;

Thinly slice green onion.

1Form & Cook Meatloaf

Shape the mixture into a tightly packed loaf, about 7 inches by 3 inches. Evenly top with ½ of hoisin amino glaze. Place on a sheet pan & bake 16 to 18 minutes, or until browned & cooked through. Once cooked, transfer to a cutting board. Let rest at least 5 minutes.

2Cook Potatoes

Meanwhile, add diced potatoes to boiling water. Cook for 16-18 minutes or until tender when pierced with a fork. Turn off the heat. Drain thoroughly, return to the pot. Add sesame oil & garlic blend, a little bit of sambal (depending on how spicy you like it). Using a fork or potato masher, mash to your desired consistency. Taste, then season with salt & pepper if desired. Cover to keep warm. 

3Cook Pak Choi

Once the meatloaf has baked about 10 minutes, in a medium pan heat 2 teaspoons of olive oil on medium-high until hot. Add the remaining ginger/onion/garlic blend & cook, stirring frequently, 30 seconds to 1 minute, or until slightly softened. Add the chopped bok choy stems; season with salt & pepper. Cook, stirring occasionally, 3 to 4 minutes, or until softened. Add the chopped bok choy leaves. Cook, stirring occasionally, 1 to 2 minutes, or until wilted. Turn off the heat. Taste, then season with salt & pepper if desired.

4Slice & Serve

The rested meatloaf crosswise. Serve sliced meatloaf with mashed potatoes & pak choi. Top the meatloaf with the leftover glaze, green onion & extra sambal olek if using – careful - it's spicy. Enjoy!
